
I present to you the perfect spring dessert! These cookies are so cute and surprisingly easy. I was inspired by @loriastern who makes such beautiful shortbread cookies with flowers from her garden. I sadly don’t have an amazing garden in my backyard, so I had my talented florist friend Sydnee Lund provide and prep my flowers. She gave me Lilacs, Pansies, and Camomile flowers.
I decided to go with sugar cookies instead of a shortbread cookie which is usually what is used. I did this because I wanted the cookies a little sweeter sense the flowers add a unique herbal taste. I am so in love with these cookies and the beauty that they bring. If you choose to use different flowers please be sure to research and make sure that they are safe to eat and that you do all the correct prep for them.
How to prep the flowers:
She prepared the flowers by carefully washing and drying them with a paper towel. Next she laid them flat on sheet of wax paper and placed another sheet on top. She then places 2 heavy books on top and presses them overnight.
Sugar cookie ingredients:
-3 sticks unsalted butter
-1 1/4 C. granulated sugar
-2tsp. vanilla extract
-1/2tsp. almond extract
-2 eggs
-4 1/2 C. all purpose flour
-1/2 tsp. kosher salt
-1tsp. baking soda
-1tsp. orange zest
For the cookies cream butter, sugar, vanilla, almond extract and zest together in a large bowl until fluffy, about 3 min. Add the eggs one at a time and mix until well combined. In another bowl combine flour, salt and baking soda and mix to combine. Once dry ingredients are mixed add half of the dry mix to the butter mixture, beating until just combined, add the rest of the flour and beat until dough has just come together.
Transfer half of the dough to a large sheet of parchment paper and flatten out the dough slightly with your hands to make a square. Top with more parchment paper and roll out the dough till it is about 1/4in thick. Place on a sheet tray and place in fridge for at least an hour. Take dough out of fridge use cookie cutter to cut out shapes and top with flowers. Place some parchment paper on top of the cookies and lightly press the flowers into the dough with fingers or rolling pin. Place cookies on sheet try with parchment paper and bake at 350′ for 8min. Take cookies out and sprinkle with sugar remove from pan and cool on rack. Enjoy!
