
This olive oil cake is one of the simplest cakes to make, and probably one of the yummiest cakes to eat. I make this cake quite often as it’s a favorite of my families and I always have the ingredients on hand. If you are ever in need of a quick cake that will impress…this is the cake.
The flavor is perfect and has a subtle olive oil taste that doesn’t overpower the other flavors. It’s such a fun spring/summer time dessert and is seriously so easy to make. I hope you guys give this recipe a try and love everything about it.
Cake ingredients:
-1 cup all purpose flour
-3/4 cups fine almond meal(or flour)
-1 1/4 tsp. baking powder
-1/2 tsp. baking soda
-1/2 tsp. kosher salt
-3/4 cup + 1 Tbs. divided, granulated sugar
-2 tsp. orange zest
-2 tsp. lemon zest
-3 large eggs
-1/2 cup fresh orange juice
-1 tsp. vanilla extract
-1/2 cup + 1 Tbs. divided olive oil
-1 Tbs. powder sugar
-orange slices (optional)
Heat oven to 350’F and grease and line a 9×2″ cake pan with parchment paper. In a large bowl whisk flour, almond meal, baking powder, baking soda, and salt.
In a separate medium size bowl add 3/4 cup sugar, orange and lemon zest. Using your hands/fingers rub the zest and sugar together until fragrant and color of sugar turns slightly orange. To the sugar add the eggs, orange juice, olive oil, and vanilla and whisk together vigorously until combined.
Pour wet ingredients into the dry and mix together until combined. Don’t worry if batter looks lumpy. Pour batter into prepared cake pan and sprinkle top with remaining 1Tbs. sugar. and place in oven. Bake for 30-35 min or until a toothpick inserted in middle comes out clean.
Place cake on wire rack and let cool in pan for 10-15min. Carefully remove cake from pan and place back on wire wrack. While cake is cooling combine remaining 1 Tbs. olive oil and 1 Tbs. powder sugar in bowl and mix till smooth. Once cake is cooled top with olive oil glaze and orange slices(if using) and dust with powder sugar. Enjoy!
