
To me mango sticky rice is the perfect dessert. It has texture, its sweet(but not too sweet) its flavorful, and when you add a perfectly ripe mango it becomes magic.
Although this is my favorite dessert, I have never attempted to make it. I went to the market and saw these beautiful mangos and realized that I had never even baked or attempted to bake with a mango before. Granted when you make mango sticky rice you don’t actually bake with it but I was inspired none the less. I went home and researched recipes and came across one from food52.com. I really enjoyed this recipe because its fairly simple but the results feel very authentic.
I made a few tweaks the recipe which are:
-Steaming rice for 20-23min — In the recipe its calls for you to steam the rice for 10-15min and to use either a bamboo steamer or a fine mesh sieve. I used a sieve which, for me me, made it so I had to cook my rice longer. A tip for when baking or cooking anything is to go with the visual indicator not the time… sometimes things will take longer or shorter depending on ovens, location and so many other factors so visual or texture cues are the way to go.
-Adding more coconut milk — This was more just a personal preference. The recipe calls for 1 cup of full fat coconut milk and I ended up using 1 cup and a 1/3 c. I did this just because I wanted my rice to be a little more wet and also more coconutty.
