
If you love doughnuts, but hate baking them because of how long the process is… I present to you, FRITTERS. This was the first time I attempted to make fritters and it was such a fun and easy process.
I decided to do a classic combo of apple and cinnamon which is one of my personal favorites. I rolled the fritters in cinnamon sugar, but you could dust them in powder sugar or even make a glaze to dip them in.
I hope you try out this recipe because it really is so easy and fun!
Ingredients:
For fritters…
-2 cups unbleached all-purpose flour
-1/4 cup plus 2Tbs granulated sugar
-2 1/4tsp. baking powder
-1tsp. cinnamon
-1tsp kosher salt
-3/4 cup whole milk
-2 large eggs, at room temp.
-2Tbs unsalted butter, melted
-1/2tsp. vanilla extract
-2 sweet apple, such as Rome or Gala, peeled, core, and cut into 1/4in pieces
-Canola oil(or other neutral oil)
For cinnamon sugar…
-1/2 cup granulated sugar
-2tsp. cinnamon
In a large bowl, whisk together flour, granulated sugar, baking powder, salt and cinnamon. In another bowl, whisk together milk, eggs, butter, and vanilla. Gently fold milk mixture into flour mixture until just combined. Fold in apples.
Heat 2 inches of oil in a medium heavy-bottomed pot over medium-high heat until an instant read thermometer registers 350’F. Set a wire rack in a rimmed baking sheet.
Working in batches, drop heaping tablespoons of dough into oil. Cook, turning once, until puffed and golden, 3-4min. Transfer to rack with a slotted spoon. Let cool slightly, then roll in your cinnamon sugar mixture and serve.
Tips and tricks: When you start frying your fritters, put a tester in first to make sure your oil is hot enough. Set a timer for 2 min and take out the fritter, let it cool slightly, then cut it open to see if it has cooked all the way through. If not then fry for an extra min.
